Whole roasted halibut is a great feast, feeding 12 16 persons. The halibut tastes best when it weighs between 4 5 kg.
- 1 whole fresh halibut
- 2-3 lemons or lime
- Premium quality butter
- Cooking oil
- Maldon salt, black pepper
1. Rinse out the fish, and clean thoroughly. Place it on a buttered cooking dish, and make small incisions into the skin. Fill with butter and sliced shallots. Line the remaining sliced shallot around the fish, on the cooking dish.
2. Pour cooking oil over the fish, and drizzle coarsely ground black pepper, and salt. Roast in oven at 200 degrees C. Estimated cooking time is 15 minutes per kg of fish. To check if the fish is ready, poke with a fork along the spine. Note that the fish will continue to bake for several minutes after you take it out of the oven.
3. Let the halibut rest and cool for at least 20 minutes, before carefully removing the skin on top.
