I recommend whole roasting

I highly recommend inviting good friends over for whole roasted Sterling ® halibut.

Use a cooking thermometer, and keep a close eye on it. Take the fish out of the oven at about 48 degrees C, and let it rest for about 10 minutes, in a tempered place.

Now, it is ready to serve. Undress the fish in front of your guests, drizzle with sea salt, and enjoy! You will be a rock­star, until someone else in your gang serves halibut!

You need:

  • 1 whole Sterling ® halibut (approx. 5 kg)
  • 100 grams Sea salt

Set the oven temperature to 200 degrees C. Rub the halibut with sea salt, before rinsing off and dry.

Insert thermometer, and roast in oven. Take the fish out when temperature shows 48 degrees C. (Approx. 15 to 25 min)
